Bodegas Luis Pérez was born out of an enology professor's tenacity to demonstrate that Jerez's future was squarely in its past. That professor was Luis Pérez and after consulting for wineries in the region for some years decided to turn winemaker himself at the turn of the century. He started the winery with one obsession in mind: going back to the (very) old roots of Jerez of interpreting the terroir to its smallest parcel and returning the winemaking to the vineyard. Almost a quarter century later and now led by his son Willy Pérez (half of the duo behind the über interesting De la Riva project), the winery produces some of Jerez's most unique and characterful wines.
With more than 100 hectares of planting spread out on some of the most sought after parcels in the region —including plantings in the famous parcels of Carrascal, Balbaína, Corchuelo and Macharnudo—, the winery is reclaiming some of Jerez's oldest wine traditions, both in the vineyard and in the cellar. On top of working with the Palomino fino variety, the winery also has plantings of local red variety Tintilla de Rota.
And only very recently, Luis Pérez bottled its very first sparkling wine. A combination of Palomino fino, a touch of Pedro Ximenez and the double fermentation of the champenoise method to create a surprising new addition to the landscape of the wines of Jerez.
