Bodegas Tradición
Miguel Villa Cebrián
Andalucía, Jerez
It's tempting to say that Bodegas Tradición needs no introduction. That's for sure in the world of sherry and its insiders.
Although the story of Bodegas Tradición formally goes back only until 1998, the family saga in the world of Jerez stretches back all the way to 1650. The Rivero family established Tradición as a way to maintain and preserve the centuries-old know how running in the family blood.
The winery adheres to the most strict and old traditions governing the famously complex system of "soleras and criaderas". A system of interconnected casks unique to Jerez designed specifically for the ageing of wine made with the Palomino fino grape and that, depending on the stage and condition, it's taken out of the rotating system and called a Fino, Oloroso, Palo cortado or Amontillado depending on the stage.
The winery produces very small quantities of its wines and most are certified as either 20 or 30 year VORS, meaning that the bottle contains wine that has been circulating in the system for at least 20 or 30 years.
The winery in downtown Jerez is also famous for housing an impressive art collection that puts Goya, Velázquez, Murillo and El Greco right next to the hundreds of interconnected black casks aging their future releases.
